Solina wheat is characteristic of Abruzzi. It is an high size soft wheat, very rustic and over the century adapated to marginal fields cultivations. It is poor in gluten and has got natural flavour. The flour obtained from Solina wheat is suitable for bread-making and for the production of typical sweets, but it can also be used to prepare handmade pasta.
Soft wheat Jervicella is an ancient variety of wheat cultivated in the South of Marche. It is planted in spring, so at the harvest time it reaches lower dimensions compared with wheat sown in autumn. This peculiarity is highlight by the use of the diminutive of the term “Jerva”. Jervicella is also used to produce straw hat, a typical product of Montappone.
