It is obtained by stone working of Quinoa's seeds (Chenopodium Quinoa), a native plant of South America. It comes from the same spinach and beet's family. From a nutritional point of view Quinoa is an almost complete food. It has a very high content of almost complete proteins with an high biological value. It is also rich in lysine, an amino acid wick lack in grains.
Quinoa contains low glycemic index carbohydrates, fats and minerals (in decreasing order): potassium, phosphor, magnesium, calcium, selenium, iron, zinc and copper.
