Chestnut flour, also knows as sweet flour, is obtained from chestnut stone milling. This flour is very fine, with a yellow ivory colour and a sweet taste. In the past, in the highland, it was an important subsistence source, thanks to its calorie count. Chestnut flour is an excellent food, rich in carbohydrates and minerals. We recommend its use with “strong” wheat flour. The best results are obtained using 20% of chestnut flour and 80% of wheat one.
