This kind of flour, like the type 0 or 00 ones, is obtained from the milling of grain grown by local farms. It's the flour obtained from the milling of non- sifted grains. It is stone milled and this give to the flour its natural taste. 

Is suitable for whole bread or it can be mixed with the white flour for sweet and savoury baked foods, more or less dark according to your preferences.
